White teas are produced by slightly fermenting young "fluffy white hair" leaves in a two step process including "withering" to inactivate oxidation followed by drying to deliver a tea with a pale appearance.
Fresh tea leaves contain high levels of Catechins and the White tea process is especially good at preserving these antioxidants. There has therefore been a series of health claims and studies carried out on this topic including studies at Harvard Medical School.
Traditionally the Chinese have also claimed strong medicinal properties of the White teas, including that they are "refreshing and good for the stomach" and that they can be used to dispel "the heat". They are also claimed to support "the five vital organs".
The tea is packaged in re-sealable silver foil packets to retain maximum freshness and aroma.
